Can’t get enough of summer dishes

Autumn is in the air. It becomes too chilly to dine outside. A beautiful salmon filet is waiting for a fabulous recipe which I found in the July edition of

For 4p, buy an entire salmon filet, with skin, of approximately 900 grams. Put 1 kilo of cherry tomatoes on baking paper on an oven tray. Add pepper, salt, 3 chopped garlic cloves and a drizzle of olive oil. Bake in the oven at 180° for 25-30 minutes. In the meantime, chop 20 grams of fresh dill and 20 grams of fresh parsley. Mix with the zeste of 1 lemon. Set aside. Mix 6 table spoons of mayonnaise with 2 table spoons of dijon mustard, 1 pressed garlic clove, 2 teaspoons of ground coriander, 2 teaspoons of ground cumin, 2 teaspoons of maple syrup, some lemon juice, pepper and salt. After 30 mins, put the salmon in the middle of the tomatoes, skin downwards. Spread the mayonnaise sauce on the salmon. Bake for another 15-20 mins. Remove the salmon from the oven. Spread the fresh herbs. Serve with the leftover of the sauce, a green salad and some roasted potatoes.
