Fresh figs in our backyard

We have an older fig tree in our backyard. This time of the year you see them gradually getting ready for consumption. The first harvest is the protagonist for tonight’s dinner.I bought some giardini base on chickpeas and lentils. Each package contains 3 piadini, with total weight of 225 grams, which is an ideal base for our main meal.Slice 2 big red onions thinly. Spread them on the piadini. Spread 9 halved figs. Season with pepper and dried thyme. Grate 50 grams of parmesan and 50 grams of old pecorino ( Iris is a parmesan lover and I’m a pecorino lover 😉). Spread on the piadini. Finish with a few stems of fresh thyme and a drizzle of olive oil. Bake in the oven at 180° for 25-30 minutes, until golden brown. Finish with good quality balsamic vinegar.Enjoy a lovely evening outside.
