Aragon is Oskars first best friend. They are really cute together. Aragon is supposed to be a real truffle dog, but is not intrested to explore our garden. Oskar is a natural talent and inspires me to create recipes with summer truffle.
Today’s lunch is a quiche, made with usual and unusual ingredients.
Start with a readymade rectangular puff pastry. Prebake in the oven for 10-15 mins.
Mix 4 eggs, 125 ml of cream and 40 grams of grated parmesan. Add pepper and salt. Slice 1 large fresh onion. Bake in some butter until glazed. Spread the onion and a handful a chopped fresh parsley on the puff pastry. Spread some grated fresh summer truffle (thanks, Oskar). Spread the egg mixture. Bake in the oven at 180° for 20 mins. Cover if the surface becomes too dark.
Serve the quiche with fresh tomatoes, a green salad, balsamic vinegar, good olive oil and some fresh truffle.
