Oskar, our puppy, has already a few play mates thanks to my lovely friends, Anria and Diane. While the dogs are entertaining each other, we will have a cosy afternoon tea. In the magazine delicious.nl I find a perfect summer cake.Seef 125 grams of flour. Mix with 110 grams of almond flour, 1,5 teaspoon of baking powder, 0,5 teaspoon of baking soda and 1,5 teaspoon of poppy seeds. Melt 110 ml of coconut oil. Add 10 grams of candy sugar and 60 grams of white sugar. Mix. Add 2 eggs, 170 grams of low fat Greek yogurt, 55 ml of light cream and some vanilla extract. Mix carefully. Add the zeste of 1 lemon. Mix (manually or with a kitchen robot) the flour mixture with the liquid mixture until you obtain a smooth texture. Spread the dough in a greased baking pan. Slice 4 nectarines ( or other summer fruit). Spread on the cake. Finish with some sugar. Preheat the oven at 180°. Bake the cake in the oven for 45 mins. Serve.
