If I clean a portion of 6 young artichokes I have a nice portion(+/- 600 grams) for 2p. Cut the artichokes in 8 and store in cool water and the juice of 1 lemon.
Chop and fry 4 garlic cloves in a drizzle of olive oil. Add the drained artichokes and 2 teaspoons of dried thyme and 1 teaspoon of fennel seeds. Stir now and again. Add some water if needed.
Mix 1 table spoon of mayonnaise with 1 table spoon of mustard, 1 table spoon of chopped fresh parsley and lemon juice.
Once the artichokes are al dente, serve.
Enjoy mindful the artichokes with the North Sea shrimps, oven baked potatoes and the dressing.
