Our house doesn’t have ( or is it ‘cannot’๐Ÿ˜‰) to be tied up to organise dinner evenings.

For certain guests I normally would prefer to have a clean and tidy house, but, as you know, that’s really impossible for the moment. Luckely the evenings are nice and warm outside. A cold soup is a perfect starter and needs

to be prepared in advance.

Chop 2 medium sized cucumber and put in the blender. Add 1 garlic clove, 1 chili, 1 table spoon of lemon basil leaves, 1/2 of a teaspoon of salt and 300 ml of almond milk. Blend. Taste, add pepper and salt. Store in the fridge to become really cold.

Before serving time, roast 2 table spoons of pine nuts. Chop 1 ripe avocado and mix with some lemon juice.

Put the soup in a nice cup. Spread some avocado and pine nuts. Finish with some sour cream and lemon basil leaves.

What else will I serve? A parmigiana ( prepared one day before)with a green salad is one of my favorite recipes ( you can find a few versions on the blog, but we go for the real stuff today).
