After 2 days of driving I have no courage anymore to go out for shopping for our dinner. A pasta with a lot of sweet onions, garlic, chickpeas is not such a bad combination. First we feed our dog Pillo and our cat Roquefort who protected our house for the last 10 days. Our lovely neighbours, the twins Cesare and Guglielmo took care of him.
5 sweet onions are desperately waiting to be prepared. Slice them and put in an oven dish. Add a drizzle of olive and 1 teaspoon of dried oregano. Bake in the oven at 180° for 30 mins. In the meanwhile there is more than enough to do 😉.
After 30 mins, stir and add 4 chopped garlic cloves, 1 chili, 3 chopped tomatoes and 1 drained can of chickpeas. Bake in the oven for another 20 mins.
Boil some pasta in salted water. Mix pasta with vegetables. Taste, add pepper and salt. Finish with fresh oregano and grated parmigiano. It’s great to be back home!
