Bean burgers

Yesterday I was cleaning my kitchen and noticed to have to many dried beans.

500 grams of dried white beans end in a pan with water to soak for 24 hours.

During those 24 hours I will find a way to prepare them.

Drain the beans. Put them back in new water, add some salt, a few garlic cloves, a few sage leaves. Boil until they are tender. Drain and blend. Taste, add pepper salt and a 2 table spoons of grated pecorino.

Oil your hands to make 6 large or 8 smaller burgers.

Put on baking paper. Bake in the oven at 200° for 30 mins. Turn halfway.

Serve with crispy oven baked fennel, onion, garlic and turnip tops and a few spoons of mascarpone.

Healthy meal and a wonderful way to use 500 grams of dried beans. Our guest, one of my lovely nieces, Emilie didn’t complain.
