There are many different cheese cakes and torte della nonna. Especially when they start to become lookalikes, I love them. So I often prepare something in between, and it is so easy if you start with a ready made pastry.
Mix 500 grams of low fat Greek yoghurt with 100 gram of low fat ricotta, 2 eggs, the zeste of 1 lemon, some real vanilla powder, and just enough sugar as you prefer (I use approx 40-50 grams because we prefer not too sweet). Mix everything carefully and add 2 table spoons of pine nuts. Put the mixture on the ready made pastry in an adapted cake form on baking paper. Finish with some almond flakes (or pine nuts). Bake in the oven at 180° for approx 45-60 mins. Cover if the dough would become to dark.
The best way to cheer you up on a cold winter afternoon (it doesn’t have to be weekend ;-)).
