We have more than 20 doors in our house, and they all need to be painted (or we want them to be white ;-)). Every door side needs 4 layers of paint. In summertime this would be a great job outside, but in wintertime the ‘cantina’ is my workshop. I can do 2 sides at the same time, and if I start early enough I can do 2 layers on one day.
This morning I decided that 1 layer was enough for today and that there were other activities to be done. Making a nice wintersoup is one of the other activities.
800 grams of oven baked pumpkin meat is waiting in the freezer. Chop and fry 2 onions and 4 garlic cloves in some olive oil. Add 1 table spoon of dried thyme, 1 table spoon of curry powder and bake shortly. Add the pumpkin, 1 dried chili pepper and 1,5-2 l of chicken stock (of cubes this time). Boil the soup for 30 mins. Cool down and blend. Taste, add pepper and salt.
Reheat the soup. Serve with fresh coriander or basil ( a bit of cream is optional).
Now I’m ready for the second layer ;-).
