The olive harvest and pressing is taking place everywhere in Tuscany. If we are lucky we will be able to have our own olive oil this year! Certain villages are really known for their olive oil feasts, as Montisi, and others are famous for the truffle, as San Giovanni d’Asso.
If the butcher puts white truffle in a sausage and I guarantee you : delicious!
Chop and fry 1 onion, 4 garlic cloves and 1 peperoncini. Add 500 grams of blanched green beans and 1 can of chickpeas.
Bake the sausages.
Make a little fresh sauce with delicious olive oil (it’s possible that the new harvest is too spicy for this), red wine vinegar, some dijon mustard and a pinch of salt. I often use the same amount of vinegar and olive oil and add some water (you better taste to find your perfect balance of flavor).
Spread the vegetables and the sausages on a plate and finish with fresh mint, some flakes of parmigiano and the dressing. Lovely autumn cooking!
