Fresh artichokes are superb, but canned artichokes can be a perfect alternative for a lazy day or when baby artichokes are not available.
Prebake a ready made puff pastry (make a few holes with a fork) in a cake form covered with firmly pressed baking paper in the oven at 180° for approx 10 mins.
Drain 2 cans of artichokes. Mix 150-200 grams of ricotta, 125 ml of light cream, 3 eggs, 2 chopped garlic cloves, nutmeg, 1 table spoon of dried thyme, pepper and salt. Spread the artichokes on the puff pastry. Pour the mixture on the artichokes. Bake in the oven at 180° for 30-45 mins, until golden brown. Cover if the surface becomes too dark.
