‘Champignon à la Grecque’

Chop and fry 4 garlic cloves, 1 red onion, 1 spicy pepper and 4 carrots in a drizzle of olive oil. Bake for approx 10 mins. Stir now and again. Add 500 grams of halved mushrooms and 1 table spoon of dried thyme. Bake for approx 10 mins. Stir now and again. Add 250 grams of halved cherry tomatoes and 2 table spoons of black olives. Bake for another 10 mins. Taste, add pepper and salt.

In the meanwhile boil 120 grams of Greek pasta (orzo).

Mix pasta and vegetables. Finish with fresh basil and some cheese (burrata or ricotta, or feta).

PS The original champignon à la Grecque is not quite the same, but the Greek style fits ;-).
