A lot of visitors are ‘afraid’ of squid. I always try to convince them to try it, just once. The sea is changing, due to the climatogical changes, and thus squid in general is moving towards more Northern countries. A real octopus with large tentacles is probably to shocking as first ‘contact with the squid family and could be the end of eating them. The original calamari, which is often the most expensive one, is a better choice.
Clean and dry the fresh calamari. Store in the fridge. Prepare ovenbaked potato wedges, blogpost (‘Involtini’ seem to be completely different from ‘meatrolls). Put halved medium sized tomatoes (2pp) in an oven dish. Spread a mixture of breadcrumb, parmigiano cheese, dried oregano, 1 chopped garlic clove, pepper and salt. Add a drizzle of olive oil. Bake in the oven at 180° for approx 20 mins (so approx 30 mins later than the potatoes). Cut 500 grams of courgettes with a spiralizer. Mix with 2 chopped garlic cloves, zeste of 1 lemon, 1 table spoon of dried thyme, pepper and salt. Add a drizzle of olive oil. Bake in the oven 10 mins later than the tomatoes.
Put olive oil, pepper and salt on the calamari. Bake shortly at each side.
Serve everything together. Do not forget lemon!
