Anyway Julies filled courgettes with mushrooms and a little cream of avocado are awesome.
Cut the head and remove the meat of 2 round courgettes (1pp). Keep the inside of the courgettes for another recipe (perfect to use in a soup) Put the courgettes in small oiled individual oven dishes.Bake in the oven at 180° for 15-20 mins. Chop and fry 1 shallot, 1 garlic clove and 250 grams of mushrooms in a drizzle of olive oil. Add 1 teaspoon of dried thyme, pepper and salt. Fill the courgettes with the mushrooms. Keep warm in the oven.
Mix the meat of 1 avocado, a handful of fresh parsley, a few table spoons of lemon juice, a drizzle of olive oil and pepper and salt in the blender.
