We seem to have a real ‘cheesy week’. Mozzarella is waiting to be consumed. Avocado, baby spinach, cucumber, tomatoes, and sweet potatoes is surely a colorful combination.
For 2p peel 500 grams of sweet potatoes. Cut in pieces of 1- 1 ½ cm thick. Mix the potatoes with 1 table spoon of garam masala, 3 chopped garlic cloves, salt and a drizzle of olive oil. Put on baking paper. Bake for 30 mins at 180°.
Mix the juice of 1 lemon with a few drops of stevia, 2 table spoons of olive oil, a bit of water, pepper and salt. Chop tomatoes, cucumber and avocado. Mix with the dressing. Add the baked potatoes, 100 grams of baby spinach and 200 grams of sliced mozzarella. Mix everything together to obtain the right balance of flavors and finish with a lot of fresh coriander.
