Cobb salad

Certain salad combinations are eternal and ‘invented’ by someone. There can be some doubt, but in  this case, Mr. Cobb was the lucky one.

Jamie Oliver made his version, docV makes her own version.

For the dressing  mix 50 grams of Stilton (even available in the Italian supermarket), 50 grams of Greek yoghurt, pepper, salt, chives and some lemon. Store in the fridge.

Bake 2 chicken leggs seasoned with chicken herbs and a drizzle of olive oil in the oven at 200° for 30-40 mins. Cover with 4 slices of coppa or pancetta during the last 10 mins. Remove the skin and bones of the chicken and split the meat with two forks ( pulled chicken). Chop the pancetta or coppa in small pieces for extra flavor.

Mix 100 grams of dandalion salad, 250 grams of cherry tomatoes and 1 avocado, cut in parts. Put everything on a large plate. Add the chicken. Finish with the dressing.

PS Instead of eggs, I add oven baked potato wedges.
