Sweet potato, eggplant and local sausages after a long stroll in Genova

Cut a large eggplant of 600 grams in two eqaul parts. Make some incisions, add salt and put them in a colander for at least 1h. Rinse and dry. Put the eggplant in a oven dish. Cover with a mixture of chopped basil, pepper, salt and 2 finely chopped garlic cloves. Put in the oven at 180° for 30-40 mins (they really have to be well done). Mix wedges of sweet potato with 2 chopped garlic cloves, pepper and salt on baking paper in the oven at 180° (at the same time as the eggplant). Stir now and again. Cut the sausages almost in two to reduce the baking time. Bake and serve all together (for vegetarians : halloumi or a vegetarian burger).
