My youngest brother, Ivan, and his partner, Peter, are real foodies. After my long journey I have to promise myself to go for the easy way. A short visit of Siena in the rain brings us to my favorite supermarket. The kind fishmonger shows me a large fresh sea bass of approx 2 kg, thus for sure no carbs tonight. Put a tajine filled with mixed vegetables (chop 1 fennel, 2 courgettes, 1 tomato, 4 carrots, 2 bell peppers, 6 garlic cloves, 1 red onion) a drizzle of olive oil, a pinch of salt and 1 table spoon of dried basil in the oven at 200° for approx 1h. Fill the tummy of the cleaned fish with sliced lemon, fresh coriander, pepper and salt. Sprinkle some oil and wrap in baking paper. Put on a large oven tray. Bake for 25-30 mins.
To combine the two dishes in the oven, remove the lid from the tajine, stir and cover the dish with aluminium foil. Put together in the oven for the last 30 mins. Finish the tajine with fresh coriander and serve. Healthy and tasty! Thanks, kind fishmonger!
