Tomorrow big shopping day thus time to inspect the fridge and freezer. We only have a small freezer, but still it is important to check regularly. Frozen can not be kept indefinitely.
A beautiful piece of monkfish in the oven with ovenbaked potatoes is always tasty.
In my case, defrost the fish (already stripped and clean) on time.
Peal 400 grams of potatoes and cut in chubby wedges. Dry the potatoes and mix with some salt, spicy paprika powder and a drizzle of olive oil.
Put the potatoes on baking paper on an oven tray. Bake in the oven at 200° for approx 30-40 mins.
Wash 500 grams of cherry tomatoes. Slice 1 white and 1 red onion. Chop 4 garlic cloves.
Spread the rucola pesto, blogpost Hasselback broccoli, hasselback potatoes..on the fish. Put the fish in an oven dish and put the tomatoes, onion and garlic in the same dish.
After 20 mins, turn the potatoes. At the same time put the other oven dish in the oven.
Mix the leftover of the rucola pesto with 1 table spoon of mayonnaise, 2 table spoons of 0% Greek yoghurt. Add pepper and salt.
