Today I went to an introduction of a master in counselling. Although I don’t know whether my Italian will be sufficient, it can only become better doing this course. I’m ready for a new chapter in this wonderful country.
Back home I felt like a ‘Sunday’ dinner : french fries, pork loin, pepper sauce and a mixed salad with avocado, green apple and lettuce.
Start with the pepper sauce. Boil 150 ml of concentrated chicken broth and 100 ml of light cream to reduce. Add 1 table spoon of green pepper balls. Taste and add pepper and salt.
For the salad mix 1 sliced green apple, 1 sliced avocado (drizzle some lemon juice on the apple and the avocado slices to avoid discoloration) and lettuce with a dressing of 50 ml of chicken broth (remember you will have a leftover), 2 teaspoons of mustard, 3 table spoons of white wine vinegar, 2 table spoons of olive oil , pepper, salt and 1 chopped red chili pepper.
Bake the pork tender loin (cut in thick slices of 3 cm). Serve the pork with the pepper sauce, the salad with the dressing and 😉 french fries and enjoy a Sunday-feeling.
