Babi pangang is the name of various Asian dishes made with pork meat.To try to get the right flavor put 250 grams of pork (I prefer low fat pork meat) in water (the meat has to be completely covered). Add 2 chopped garlic cloves, 1 teaspoon of sambal, 1 table spoon of ketjap, 1 tea spoon of salt, 1 tea spoon of ginger powder and 1 teaspoon of sugar.Cook the meat for 15-20 mins and cool down in the liquid. Remove the meat and dry. Keep the liquid. Bake the meat on a high fire in some peanut oil (or fry the meat). For the sauce, mix the liquid with 2 table spoons of tomato puree, 2 cm of ginger, 1 table spoon of sambal, 4 table spoons of vinegar, 4 table spoons of ginger syrup.Cook the sauce for 10-15 mins and add some salt if necessary. Remove the ginger and add the meat.
Serve the meat with rice or noodles and some steamed vegetables with a dressing made of 2 table spoons of vinegar, some sugar, 2 table spoons of peanut oil and salt (typical sweet and sour taste).
