I try to convince myself that pastry is not my thing 😉 but an afternoon coffee without something sweet is not the same. Sweet but not too sweet : that’s a perfect compromise!
Make small portions and use the smallest spoon or fork and eat mindful!
Buy a prepared dough for sweet pastry. Make cirkels as big as the recipient (+/- 8 cm). Put the dough in the recipient, cover with baking paper and add some dried beans or peas to bake the dough for 15-20 mins in the oven at 180°.
Remove the paper and filling ( I re-use the beans and peas for the same purpose, but you can also buy baking pearls).
For 4 p mix 250 grams of mascarpone with 100 grams of Greek yoghurt. Add 16 grams of vanilla sugar (2 little portions) and zeste of 1 lime. Keep this mixture in the fridge until you finish the pastry.
Fill the pastry with the mixture and spread a mixture of red fruit on top. Not too sweet, and super delicious.
