Polpette di sarde is a traditional dish in Sicily. I’m sure the Sicilians will not disapprove the variant based on mackerel. For 3p mix 600 grams of mackerel filets(with skin), 1 onion, 4 garlic cloves, 50 grams of bread crumb, salt, pepper, a handful fresh parsley and some mint leaves in a blender (roughly). Add 2 table spoons of white wine, 2 table spoons of pine nuts, 2 table spoons of raisins. Taste and roll balls of approx 3-4 cm max. Put the balls on baking paper. Add a drizzle of olive oil and bake in the oven at 180° for 15-20 mins. Turn halfway. Serve the balls with a large mixed salad (rocket, radishes, tomatoes, cucumber,…)and a dressing based on olive oil, lemon juice, mustard, honey, pepper and salt, as main dish. Really delicious!
