Most ingredients in Italy are of a superb quality, and this includes the meat.
Certain days I really crave for a piece of perfect meat. The’ pick of today’ is ‘suino italiano’, italian pork. This succulent piece of meat is perfect in combination with a pasta in Greek style.
Chop 1 red onion, 4 garlic cloves and 1 spicy little pepper. Fry in some olive oil. Put the dish in the oven to go for the easy way. Add 700 grams of courgettes, cut in cubes. Add 1 table spoon of chopped fresh sage. Boil the small Greek orzo pasta (60 grams per person). Marinate the meat in olive oil, pepper, salt, chopped rosemarin and some lemon zeste.
Mix the boiled pasta with the vegetables, 10 sliced black olives and 100 grams of crumbled feta cheese. Put back in the oven while you grill or bake the pork cutlets on a high fire.
Ready to eat.
