The evenings when I only cook for myself I try to ‘serve’me a dish which I would not prepare for the two of us. Tuscany sausages are one of those delights.
For myself 2 round courgettes, halved and hatched. Cut the flesh of the courgettes and mix with 4 chopped garlic cloves, 1 chopped spicy little pepper, 7 chopped sage leaves, half of a mozzarella in small pieces, pepper and salt. Fill the courgettes with this mixture. Put a slice of mozzarella on top. Add a drizzle of olive oil. Bake in the oven at 180° for 30 mins.
For 1 p 2 little sausages(200 grams, okay this is meant to spoil!!) partially cut. Put some fennel seeds in the minced meat. Bake them or grill them, or put them in the oven.
No carbs, enough vegetables (450 grams of courgettes) and probably to many proteins (125 grams of mozzarella and 200 grams of meat) but sooo delicious!
