First of all, happy new year ( it’s still January). I wish you all lots of cooking pleasure, this includes good health and nice people around your table to share a meal with.
I love afternoon tea with something sweet, homemade, without the overload of sugar and fat.
Delicious.nl gave me the inspiration for the following recipe.
Mix 100 grams of butter ( room temperature) with 4 eggs, 150 grams of low fat skyr ( instead of 100 grams of extra butter) and 120 grams of eritritolo ( a 0 kcal of natural sweetener). Add a pinch of salt, 200 grams of almond flour, 100 grams of normal flour, 1 teaspoon of baking powder and the zeste of 2 untreated oranges. Mix until you obtain a smooth dough.
Grease a springform of 24 cm. Cover with baking paper. Pour the dough in the spring form. Spread some slices of the peeled oranges on the dough.
Put the cake in a preheated oven at 180°. Bake for 45 minutes.

I can imagine you would say : Why all those substitutions, why not just the real stuff? Because I prefer to have my daily guilty pleasures without too much ‘guilt’. 😘
PS I use the untreated tarocco oranges ( they have no seeds and the color is always a surprise).
