We are still in Norway, going further north. Let’s hope the weather improves so that we can admire nature at its best.
Today I will prepare some pasta with green ingredients. I found some good looking broccoli, 2 mature avocado’s, some sugar snaps.
Heat the simmer pan filled with salted water until boiling. Add 160 grams of pasta. For this recipe I take spaghetti which needs approximately 12 minutes to be al dente. Add 500 grams of broccoli, chopped in little roses and cubes ( I peel the stem and cut in cubes) halfway. Once everything is al dente, drain. Keep 1 cup of the cooking water. Set aside.

Chop 1 red onion, 4 garlic cloves and 1 chili. Put them in a simmer pan. Add the olive oil of 1 small can of anchovies. 1 table spoon of dried thyme and 40 grams of pine nuts. Heat the pan. Start frying. Stir and bake.
Chop the avocado. Mix with lime juice and the skin of the lime. Add to the pan. Continue to bake. Add 150 grams sugar snaps. Continue to bake.
Once everything is al dente, add the pasta and broccoli and mix. Finish with the anchovies. Serve with arugula, balsamic vinegar and parmesan.

Although I try to do my best, I realize that here in Scandinavia a lot of vegetables which you find in the supermarket are not local. It would be really difficult to cook creative with only local products. I hope you understand 😇.
