We are on the Lofoten. We just did a lovely hike with amazing views and were rather wet when we arrived back in our camper. We have a few good reasons to stay on the parking lot until tomorrow : as a camper you have to pay for 24h; there are so many tourists on the Lofoten and not enough infrastructure for reasonable prices; we already got a fine this morning because we were wrongly parked; it looks like it will not stop raining this evening…so we stay here, and I will prepare us some pancakes for the afternoon tea.
With 200 grams of flour, 2 eggs, 1 little package of vanilla sugar, 500 ml of milk, a little amount of sparkling water and some oil and butter we will have have pancakes for 4 ( or 2ร2๐).
Put the flour in a larger bowl. Use a whisk to remove all the clots. Add 500 ml of milk ( I took full milk). Mix. Add 2 eggs, one by one, and mix. Add the vanilla sugar. Finish with some sparkling water. Add the oil in the batter. Mix.
Heat a non sticky pan. Put a small amount of butter in the pan. As I’m not so well equipped, I choose to make the pancakes a bit thick ( Michel, my father in law, would do it much better, his pancakes are the best), but that’s okay too ๐.
Keep your pan hot, turn the pancakes on time. Keep your focus๐. I have 9 medium sized pancakes, which we will happily enjoy during now and tomorrow afternoon.
