For an afternoon tea in the summer you can quickly prepare a perfect sweet delight with ready made puff pastry and summer fruit.
Chop 250 grams of rhubarb in cubes. Add 300 grams of mixed forest fruit ( frozen is a perfect alternative), the zest of 1 untreated orange, 1 large table spoon of corn starch and 2 table spoons of icing sugar. Put in the microwave for 4 minutes at 800w. Stir. Put back in the microwave at 800w for another 3 minutes. Stir. Cool down. Taste. Add sugar or some lemon juice if you prefer.
Spread on a rectangular or round ready made puff pastry. Fold the borders to create a galette.
Preheat the oven at 200°. Put the ‘galette on baking paper on a hot tray. Bake for 25 min. Ready!
