It takes so much more than good food to turn a dinner into a moment of enjoyment, even if the food itself is not unimportant. Outdoor dinners in good company and with an amazing view are my favorites. And honestly, we have a lot to of those awesome dinners at our place.
Tonight’s dinner is an all-in-one dish without carbs. Chop 1 cauliflower in little flowers and cubes. Spread in an oven dish. Mix with 4 garlic cloves, 1 table spoon of curry powder, 1 table spoon of garam masala and 2 table spoons of olive oil. Roast in the oven at 180° for 30 minutes. Stir halfway. Parboil 400 grams of spinach. Drain. Add to the cauliflower. Add 1 table spoon of dijon mustard, pepper and salt. Mix all the ingredients.
Brush 1 table spoon of dijon mustard on both sides of 2 salmon filets. Spread the salmon on the vegetables. Finish with 150 ml of coconut milk. Put back in the oven during 10-15 minutes
Enjoy an outdoor dinner with an amazing view.
