After rediscovering a cookbook with worldwide bread recipes, I decided to try some creativity in my homemade bread efforts. I normally use those readymade flour mixtures ( imported from Belgian, AVEVE all in👍, no I do not receive discount 😉). There are many varieties, but a Sunday morning breakfast with crispy little ‘pistolets’ will be even more ‘Sunday’.
Although I will still have to work on timing, my first experiment is not bad.
Take a large bowl. Put 400 grams of hard wheat through a sieve. Add 1,5 teaspoon of salt and 1 teaspoon of sugar. Mix and make a hole in the middle. Dissolve 15 grams of yeast ( I used dry yeast but I’m sure fresh yeast is better) in 1,2dl of lukewarm milk. Cover with some flour of the sides. Allow to rest for approximately 15 mins, until you start seeing some little bubbles. Add 1,75dl lukewarm water. Mix. Spread some flour on a clean (wooden) table. Knead the dough for approximately 10 mins with your hand until it’s is soft and elastic. Put the dough in a greased bowl. Cover with greased cling film and allow to rest and raise for 1,5h at room temperature until the volume will be doubled. Knead once more, shortly, on a floured surface. Cover and allow to rest for another 5 mins. Split the dough in 10 portions and make little rolls. Put them on a greased baking tray. Leave enough space between each roll. Spread some flour. Cover again with greased cling film. Allow to rest and raise for 30 mins, until they have doubled in size. Grease your hand or a knife and make a deep cut in each bun. Allow to rest for another 15 mins.
PS In view of timing, I prepared the recipe until here on Saturday night. The following morning I had 1 large flat super fluffy dough. I has to knead it once more. In order to prevent this, next time I will stop after kneading the first time and finish the next morning.
Preheat the oven( normal heating, no hot air oven) at 225°. Put a small oven dish filled with 250ml of water in the lower area. Bake the buns in the oven. Bake for 15-20 mins, until golden brown. Cool down on a grill.
