Polpo is one of my favorites of the whole squid family. Buy them super fresh and cleaned, put them in the freezer or cook them immediately. A squid of approx 1 kilo is perfect for a carbon free meal for 2p.
Put the polpo in a large amount of water. Add some bay leaves, fresh thyme and sea salt. Boil until the polpo is really tender, 50-60 mins. Drain the polpo and chop in large pieces. Chop and fry 4 garlic cloves, 1 chili and 2 teaspoons of cumin in a large drizzle of olive oil. Add the polpo and bake. Finish with lemon juice.
In the meanwhile put a mixture of salad (200 grams) in a large bowl. Mix with avocado cubes, grapefruit, cucumber and a few tomatoes. Spread the polpo on the salad.
