This side dish is Iris favorite. It’s an original Ottolenghi and I surely posted it before. It’s a perfect dish for a larger buffet.
Marinate 1 sliced red onion in 3 table spoons of red wine vinegar. Add a handful of chopped dates. Stir now and again.
Cut 3 pita breads in smaller pieces. Chop and fry 4 garlic cloves in a drizzle of olive oil. Add the bread. Bake until crispy.
Mix the onions, dates and bread with 200 grams of baby spinach. Add pepper and salt and some pomegranate seeds.
Serve with grilled fish or meat. For a complete meal, add some nuts.
