Coconut pancakes in layers

While running on the treadmill I watch series or cooking programs. Recently Julia Child joined me and inspired me for this recipe.

Mix 120 grams of selfraising flour with 2 table spoons of coconut powder, 300 ml of coconut milk, a pinch of salt, 2 eggs and 2 teaspoons of sugar. Mix and store in the fridge until baking time.

Heat 400 grams of frozen forest berries. Add some lemon juice and some sugar (taste to get your prefered sweetness). Cool down.

Bake the pancakes in a medium sized pan. Use a combination of butter and peanut oil. Cool the pancakes down.

Take a nice plate (which can be used in the microwave). Start with a pancake, some forest fruit, some grated coconut and continue. Finish with forest fruit.

Reheat the dish in the microwave. Finish with some grated coconut. Looks good, tastes good!
