Wintersalad

If people ask me what my favorite dish is, there is no way I could give you an immediate answer. Followers of my blog can probably notice that I love to serve everything on one large plate ( call it Ottolenghi style or docV’s ;-)). I prefer to combine lots of vegetables (min 300 grams pp), combined with proteins ( fish, meat, nuts, chickpeas, lentils,..) with or without carbs. I don’t follow any particular diet but I love the see the ingredients, I love spices, garlic, peperoncini. I don’t really count kcal, but I try to cook, to eat and live in a healthy way, hoping to be able to continue for a long long time.

I love routines, rituals, but not for my daily evening meal.

Cut 600 grams (after cleaning) of celery in cubes. Mix with 1 large red onion cut in wedges, 4 sliced garlic cloves, 1 chopped peperoncini, thyme and a drizzle of olive oil. Put everything on baking paper. Add pepper and salt. Roast the celery in the oven at 200° for aprox 20-25 mins. Stir now and again.

Bake 250 grams of chicken breast, seasoned with a mixture of chicken herbs.

Serve the roasted celery with a green salad and the chicken. Finish with a dressing of 1-2 table spoon of good olive oil, 1-2 table spoon of red wine vinegar, 1 table spoon of water, 1 teaspoon of dijon mustard, ½ teaspoon of honey.
