There are so many ways to make fresh pasta. Today I want to prepare fresh pasta without eggs, only flour 00, water, a bit of olive oil and a pinch of salt. I use my kitchen robot to start. Put 200 grams of flour ( good for a portion for 3-4p) in the robot. Add a pinch of salt and a drizzle of olive oil. We add some lemon zeste and chopped parsley for a different color and flavor. Start the motor and add slowly some water to obtain a smooth dough. Store the dough in plastic cling film in the fridge. Clean the kitchen table (I have a wooden worksheet which is ideal). Put some flour on the table. Put flour on the rolling pin and on your hands. Put the pasta dough on the table and knead once more. Add flour (or water if needed). Cut the dough in 4 parts and roll each part thinly. Cut the pasta in ‘maltagliati’ or ‘badly cut’, thus in irregular, rather large and short pieces. Put the pieces on a clean towel or baking paper with some extra flour to prevent sticking together.
Heat a large pan with water and a pinch of salt. Put approx 50 ml of olive oil in a small pan. Add the zeste 1 lemon and bake shortly. Chop and fry 4 garlic cloves in a 1 table spoon of butter and 1 table spoon of olive oil in another pan. Add 500 grams of spinach and 100 grams of rocket salad (keep a handful for the finishing touch). Boil the pasta shortly. Drain. Mix pasta and vegetables. , pepper and salt. Add 300 grams of lucious mozzarella. Finish with sumak, fresh rocket and the lemonzeste oil.
