Lunch in the shade

The following days will be hot. Our Belgian guests are already getting used to that kind of weather. A fresh lunch outside is a nice welcome to old friends. A green cold soup (cfr blogpost Green gazpacho), a cold pasta salad, a simple green salad, a simple caprese (tomato, mozzarella and fresh basil) and some watermelon salad is an easy and fresh combination.

Prepare the soup the day before and store in the fridge.

For the pasta salad, boil 250 grams of short pasta the day before. Drain (keep 100 ml of the liquid) and cool down. Make a dressing of 100 grams of Greek yoghurt and 100 grams of feta cheese. Add the pasta water, the juice of ½ of a lime, 1 table spoon of chopped parsley, 1 table spoon of olive oil, pepper and salt. Mix the dressing with the pasta and store in the fridge. Before lunch, add 250 grams of halved cherry tomatoes, 1 bunch of chopped radishes and, if needed, some extra olive oil, pepper and salt.

Cut ½ baby water melon in cubes. Add the seeds of ½ of a pome granate, pepper, salt, a drizzle of olive oil and some lime juice. Put a firm ricotta in a small oven dish. Add a drizzle of olive oil, pepper and salt. Grill shortly at 250°. Put the ricotta in the middle of the salad.

Serve everything together with some fresh bread.
