A gazpacho in summer is a super nice in-between or starter. One condition, it needs to be really cold.
Mix 1 cucumber, 2 green apples (only remove the seeds), 1 garlic clove, 4 cm of fresh ginger, a drizzle of white balsamic, 1 chili pepper and a teaspoon of salt in the blender. Add cold water. Taste and add pepper or salt. Store a few hours or an overnight in the fridge. Serve with fresh coriander and a drizzle of good olive oil!
