Soupe au pistou

Pistou is like a pesto, but without the nuts and cheese is optional. Prepare the pistou in a mortar to fortify your arms ;-). Put 4 garlic cloves and  a lot of basil in the mortar and start (you can spread this activity to give your arms some rest). Add olive oil until you obtain a nice not too liquid and not too firm structure.

For the soup. Chop and fry 1 large fresh onion, 2 carrots, 3 celery stems, 1 peeled potato and 2 tomatoes in a drizzle of olive oil. Bake and add 1 liter of water and a pinch of sea salt. Boil for 15 mins. Add 100 grams of frozen peas  and 50 grams of small pasta on the moment the soup is really boiling. Serve the soup with the pistou. Cheese is optional.
