Pasta 4kids ;-)

If there are kids among your guests, either you try to ignore that they hardly eat, or you prepare ‘adapted’ food which often is also appreciated by their parents. Being less than 8 a buffet would be a bit ridiculous, only if you prefer to have lots of leftovers.

Thus a short pasta, tomato sauce, small meatballs, basil and mozzarella, prepared in advance and reheated in the oven is most of the times succesful.

Buy 800 grams of mixed sausages (for 7p) (italian, chicken). Squeeze the meat out of their skin. Sausage meat is already seasoned (especially the italian sausages), so you don’t have to add extra. Make small meatballs with oiled hands. Put the balls in an oven dish. Bake at 200° for 20 mins.

In the meanwhile, make a tomato sauce with 2 large chopped onions, 6 chopped garlic cloves and 4 cans of tomatoes (normal and cherry tomatoes). Add some red wine (I use this to ‘clean’ the cans) for extra flavor. Fry the onion and garlic in some olive oil. Add 1 table spoon of dried basil. Add tomatoes and wine and allow to simmer for 30-60 mins. Boil the pasta al dente (not too much, because of the extra time in the oven). Mix sauce, pasta and balls in the oven dish (the same one as the one which you used for the balls). The baking liquid of the balls gives extra flavor. Store the dish cool.

Spread some mozzarella on the pasta. Bake in the oven at 180° for 30 mins (dish needs to be hot, so check!). Finish with fresh basil. Serve the pasta dish with a green salad for the addicted ones.

PS Start with some raw vegetables as radishes, carrots, tomatoes and a lovely bagna cauda sauce, some tasty pecorino cheese, delicious fennel salami, tarelli and olives and end with a variety of Italian ice cream after and above all, enjoy a dinner with friends and kids.
