Cooking is not always time consuming, and doesn’t have to be elegant to be healthy and tasty.
Marinate chopped chicken in olive oil, lemon juice, pepper and salt. Chop sweet potatoes, eggplant, courgettes, mushrooms, tomatoes, onion, garlic. Add a few stems of fresh rosemary, olive oil and put everything on baking paper in the oven at 180°. Pepper, salt and buon appetito.
Put the eggplant and potatoes first and add all the other ingredients after 30 mins, to be sure everything is well done at the same time.
Add fish or cheese in case you want some other proteins. You can just eat more if you eat this dish without ;-).
