Easy cooking, broccoli chicken and rice, all-in one

I don’t know why but you can’t find chicken breast with skin here in Italy. I found this great macelleria in Taverna d’Arbia and hope to convince them soon to do this for me ;-).

Although I know that for Iris the white of a chicken leg is not the same as chicken breast, I love drumsticks on my plate.

For 2p, blanch 600 grams of broccoli in salted water. Drain the broccoli. Chop and fry 1 onion and 4 garlic cloves in a drizzle or olive oil (bake in a dish which can be used in the oven too). Add 120 grams of  basmati rice, 1 teaspoon of dried basil and 1 teaspoon of dried oregano. Put the chicken on the rice. Add 300 ml of chicken stock. Bake in the oven at 180° for 30 mins. Add the broccoli and a few black olives. Bake in the oven until the chicken is ready ( Add some stock if necessary and cover the dish if the broccoli starts to become too dark). Rice ready? Chicken ready? Add pepper, salt, some lemon juice and enjoy your meal.
