My dear mother who hasn’t travelled for a long time, agreed to come and visit us in Italy. My youngest brother is her bodyguard ;-). Thus, my cooking style will be less adventurous the following days.
The Chianti route brings us from Florence to Siena and chicken alla ‘cacciatore’ gives the start signal of a few memorable days. Clean and cut a good quality chicken. Bake 1 kilo of seasoned chicken parts (for 5p) at both sides in a hot oiled pan. Add 3 chopped carrots, 2 chopped celery stems, 1 chopped red onion and 4 chopped garlic cloves. Deglaze with 200 ml of white wine and allow to evaporate. Add 800 mg of passata. Add thyme, pepper and salt. Simmer uncovered until the chicken is ready (can also be done in the oven). This dish is ideal to prepare in advance and reheat. Serve with potatoes.
