Last week was really intense. While Iris had to work, I had a lot of ‘social’ appointments and travelled from one place to another. So nice to see some friends and family (it’s always difficult to make a ‘list’) and so nice to be back home.
Let’s start with a tasty, quick and real Italian recipe, scaloppine al limone. This dish is traditionaly made with veal, vitello, but let’s go for a chicken version. Marinate the thinly sliced chicken filet (250 grams for 2p) in juice of ½ lemon for 30-60 mins. Dry the chicken and put each slice in a bit of flour mixed with pepper and salt or chicken herbs. Bake the chicken in a hot pan with some olive oil. Bake 2-3 mins at both sides and remove from the pan. Add the juice of the other ½ lemon and 100 ml of white wine. Add pepper and salt. Allow to cook until you get a nice sauce. Reheat the chicken and serve with thinly sliced lemon.
Perfect side dishes : steamed green beans, courgettes and peas, seasoned with pepper, salt and a drizzle of good olive oil; 600 grams of potato cubes, preboiled for 5 mins, drained and dried and ovenbaked with 1 table spoon of olive oil mixed with ghee or butter, 4 chopped garlic cloves, fresh rosemarin or bay leaves and the zeste of 1 lemon (the lemon which you used for the chicken; a fresh spinach salad).
