Yes, fresh coriander!

While cooking for a large dinner for tomorrow….

Chop 4 cm of fresh ginger, 1 onion, 4 garlic cloves and 1 cucumber. Put everything in an oven dish with a drizzle of peanut oil. Bake at 180° for 20 mins. Stir now and again. After 20 mins mix with 300 grams of cherry tomatoes and 1 teaspoon of curry paste. Put back in the oven for another 10 mins. Mix with 150 ml of coconut milk and put back in the oven until the sauce start thickening. Add 200 grams of shrimps and heat them shortly (the shrimps are quickly al dente). Serve with boiled farro and a handful of fresh coriander. Wow, I love that smell.
