The decision is made. The presence of the right guest, one of my daughters, is a perfect reason to try some beef of the best ‘macelleria’ in town.
Perfect meat needs a potato side dish and a simple salad.
For 3p slice 750 grams of potato with a mandoline. Heat 50 grams of real butter and mix with 1 chopped garlic clove, 1 table spoon of chopped fresh rosemary, 1 table spoon of chopped sage, black pepper and salt.
Take a small spring form and cover with baking paper. Spread the sliced potatoes in cirkels. In between the layers, brush the herb-butter mixture. Finish with a few sage leaves.
Bake in the oven at 180° for approx 1h. It is perfectly possible to prepare the potato dish in advance and to reheat in the oven.
Bake the meat on a grill or in a pan, with simply some pepper and salt. A green salad with cherry tomatoes is a perfect side dish.
