Inspired by Jamie Oliver’s recipe for cinnamon bunnies, I will bake simple sweet raisin buns. Iris will be thrilled 🙃.
Heat 200 ml of semi skimmed milk with 55 grams of unsalted butter until the butter has melted.
Mix 450 grams of bread flour (I used manitoba flour) with 1 teaspoon of salt, 45 grams of candy sugar and 7grams of dried yeast. Add 1 egg. Mix. Add the milk. Knead for approximately 10 minutes until you obtain an elastic dough. Cover with a wet towel. Allow to rise for at least 30 minutes.
Add 90 grams of raisins. Knead once more. Create a sausage. Split in 12 parts and make balls. Spread them on an oven tray on baking paper. Cover with a wet towel. Allow to rest in the fridge until the following morning.
Wake up. Remove the dough from the fridge ( 30 minutes at room temperature in enough). Preheat the oven at 195°. Bake the buns for +/-15 minutes. What a fabulous flavor to start a lovely Easter Sunday.
