Clean 2 bunches of fresh carrots ( I didn’t weigh them but probably almost 1 kilo). Spread them in a tajine. Add 2 table spoons of olive oil, 2 teaspoons of cumin seeds, 1/2 teaspoon of turmeric, 1 teaspoon of coriander powder, 4 chopped garlic cloves, 1 chopped red onion and 1 teaspoon of honey ( I have a delicious local honey with saffron). Mix carefully. Cover. Bake in the oven at 200° for 40-50 minutes. Stir. Add 1 chopped fresh chili, 1 drained can of chickpeas and 50 grams of pine nuts. Stir. Cover. Put back in the oven for 40-50 minutes. Add 100 grams of low fat Greek yogurt. Stir. Taste, add pepper and salt. Put back in the oven for another 10 minutes. Finish with fresh parsley ( coriander would be even more exotic). Serve with or without couscous, basmati rice, or ….
PS halved carrots will reduce the oven time
