Doc V's Healthy Kitchen

Iris and I married 9 years ago on 30/10/2010. We were the first female couple in Tervuren, near Brussels. Although we have other( more) special days of anniversary this one is the official one.

No restaurant, no friends, nothing fancy…dinner in our home cinema 🥰.

400 grams of skinless mackerel, 1 tomato, 1 chili, 3 garlic cloves, 20 grams of fresh parsley, 2 salted anchovies filets end up in a blender. Add 2 egg and 3 tablespoons of panko. Taste, add pepper and salt. Create 4 flat burgers with oily hands. Put in baking paper. Allow to become firmer on the fridge for approximately 30 mins.

Heat the oven at 200°. Spread some olive oil on the burgers. Bake for 30 mins. Turn halfway.

In the meanwhile mix 3 table spoons of mayonnaise, 1 table spoon of Greek yogurt, 1 table spoon of almond flour, 1 chopped garlic clove. Add lemon juice, pepper and salt.

Heat some sesame sandwiches ( you know, those meant for burgers.

Serve the burgers on the bread with dandelion and sliced tomato.
